A brief steaming process halts oxidation before leaves are rolled and dried for steeping.

Brew Notes
Start with 3-4g per 8-10oz cup at 175F for 1 minute.
Increase intensity with slightly hotter water (180-185F) and/or a longer steep (1:15-1:30).
